Mix and Match Quick Bread

I stumbled upon this recipe at the neat blog By Sun and Candlelight and we made it yesterday to use up some of the zucchini people have been blessing us with. It was so delicious both loaves are long gone and we’re making more today.
Not only is this tasty, healthy and easy, but it’s great fun to pick out which ingredients to toss in! We used shredded zucchini, crushed pineapple (drained) and smashed banana. The combination was wonderful and you’d be hard pressed to identify the add-ins. It was sweet, moist and filling.
The kids brought some to an elderly neighbor, some to one of the ladies who brought us zucchini and even handed it out to the construction workers who are fixing our curbs out front. Everybody loved it. You’d never guess it was so healthy.

This is great fun to make with the kids and can be frozen if you want to make a bunch at once. Here’s the recipe (from the book “Frozen Assets”).
Cook’s notes from our house: I used 2 cups organic whole wheat pastry flour and 1 cup organic white. I get all of our organic flour from the local food coop in bulk. It’s worth the search to find whole wheat pastry flour since it is softer and lighter in baked goods (cookies, cakes, quick breads and the like) than regular whole wheat flour. I also recommend always using whole wheat bread flour for bread instead of regular for the same reason. Each type has its own amounts of gluten and other factors that really make a difference! We skipped the seeds/nuts. Also, I forgot the vanilla completely and we didn’t miss it. I added extra cinnamon though, cuz I’m that kinda gal.
My fabulous friend Claire made it today with fresh blackberries, nutmeg and lemon zest and she and her girls proclaimed that version excellent too!
